Ingredients:
6 (6-ounce) tilapia fillets
3 tablespoons dijon mustard
1 cup sliced almonds, finely chopped
2 tablespoons lemon zest
2 tablespoons finely chopped fresh parsley
2 tablespoons extra- virgin olive oil
2 teaspoons salt
2 teaspoons ground black pepper
First, you preheat the oven to 400 and line a baking sheet with aluminum foil, and spray with nonstick cooking spray. Then you place the fish on the pan and brush with mustard on both sides of the fish. You then combine almonds and all the remaining ingredients then spread the mixture evenly on the fish and press down gently. Let it bake for 9 to 11 mins until fish flakes with a fork and serve immediately. This recipe is found in Paula Deen magazine January/February 2014 page 15.
